LBT#4 : Chocolate Shortbread Cookies with Ganache Filling

Waktu baca pengumuman PR LBT#4 rolled cookies....wuaahh kebakaran jengggot soalnya gag pernah bikin yang namanya cookies karena memang gag terlalu suka ngemil makanya gag pernah niat bikin, berhari-hari kebingungan mau bikin apa googling sana-sini cari resep sampe nyambangin gramedia buat cari wangsit karena mikirnya harus bikin cookies yang bisa dihabisin sama hubby yang suka banget sama selai coklat, tadinya udah hampir nyerah karena berbarengan juga waktunya sama kepindahan rumah yang bikin hetic banget tapi task is a task diniatin bikin PR sebelum barang2 dapur masuk kardus untuk diangkut ke rumah baru dan akhirnya nemu juga cookies yang sesuai, Masalah lainnya adalah kebanyakan resep cookies asalnya dari luar otomatis takaran bahannya pun pake measuring cup bukannya pake takaran timbangan seperti kita pada umumnya...waah ribet juga nih males konversi takutnya salah karena ini cookies perdana akhirnya jadi maksa ke ace hardware untuk cari measuring cup sambil berharap bisa pake kacamata kuda liat properti-properti dapur yang bikin sakit mata dan hasilnya gagal dengan suksesnya karena berakhir dengan nenteng mangkok2 lucu, places mates dan napkin aneka warna yang bikin bangkrut huhuuu...dan niat beli measuring cupnya malah hampir kelupaan saking sibuknya liat barang2 yang lain.

Terinspirasi dari maccaron, cookies berbentuk sandwich dengan filling ganache ini cocok dijadiin temen minum sore2... here's the recipe....

Chocolate Shortbread Cookies with Ganache Filling

Ingredients

• 2 cups confectioners' sugar
• 1/2 cup Dutch process cocoa powder (aku pake tulip black forest)
• 3 1/2 cups all-purpose flour/1 cup
• 1/2 teaspoon salt
• 1 1/2 cups unsalted butter, chilled and cubed
• 1 teaspoon vanilla extract
• 2 eggs

Directions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a large bowl, stir together the confectioners' sugar, cocoa, flour and salt until well blended. Cut in the butter until lumps are no larger than peas. Add eggs and vanilla; mix until a stiff dough forms. It may take a minute to come together.
3.On a lightly floured surface, roll out dough to 1/4 inch thickness and cut into desired shapes using cookie cutters. If the dough is too sticky, chill for a little bit. Place cookies 2 inches apart onto an ungreased baking sheet.
4.Bake for 8 to 10 minutes in the preheated oven, or until the surface appears dry. Allow cookies to cool for a couple minutes on the baking sheet before removing to wire racks to cool completely.

Ganache Filling

Ingredients

* 9 ounces bittersweet chocolate, chopped
* 1 cup heavy cream
* 1 tablespoon dark rum (optional)

Directions

1. Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.
2. frosting chocolate filling, allow it to cool until thick, then whip with a whisk until light and fluffy and ganache is ready to use to fill the cookies.
